Zuccini Slice


375g grated zucchini

½ cup olive oil

1 cup grated cheese

250g diced bacon

1 cup SR Flour

5 eggs

Salt and pepper to season


Pre heat oven to 150 degrees. Grease a large baking dish.

Beat eggs and oil. Add all other ingredients. Pour into baking dish and bake for 30-40 minutes.


Basic Pizza Dough


7g dried yeast

½ teaspoon sugar

¾ cup lukewarm water

1 ½ cups plain flour

Pinch salt

2 tablespoons oil


In a small bowl, combine yeast with sugar, add lukewarm water and let stand 10 minutes or until bubbles appear on surface. Sift flour and salt in bowl, make well in centre, add oil and yeast mixture. Mix to a firm dough by hand.

Turn dough onto floured surface, knead for 10 minutes or until dough is smooth and elastic.

Roll out dough to ½ cm thickness and use cutters to cut individual pizzas.

Place on lightly oiled tray.

Spread pizza base with tomato paste and prepared toppings.

Bake in hot oven 15-20 minutes or until crust is golden brown.

1 teaspoon curry powder

1 tbl spoon satay sauce


2 teaspoons chilli sauce2 teaspoons soya sauce1/3 cup water

¼ chicken stock cube

2 teaspoons dry sherry

1 teaspoon cornflour

1 teaspoon water



Heat oil in pan and brown steak and onions.

Add potatoes and curry powder and cook for 5 minutes.

Add satay sauce, chilli sauce, soya sauce, water, stock cube and sherry.

Simmer 30 minutes.


Shepherd’s Pie- 2 people

 1/8 onion, diced1/2 carrot, dicedSmall piece broccoli or zucchini or capsicum, diced200g minced beef or lamb

½ tin (200g) tinned crushed tomatoes

¼ beef stock cube

¼ cup water

1 teaspoon cornflour

1 teaspoon water

*Salt and pepper

2 potatoes

1 tablespoon milk

1/4 cup grated cheese (optional)


Pre Preparation
  1. Preheat oven to 200°C
  2. Grease baking dish


  1. Peel potatoes, cut into small pieces. Place in a saucepan, cover in boiling water, cook until tender (about 15 minutes). Drain and mash with milk.
  2. Heat frying pan and cook mince and vegetables for 5 minutes or until mince is brown.
  3. Add stock cube and water, salt and pepper and cook a few minutes.
  4. Thicken with cornflour that has been mixed with 1 teaspoon cold water.
  5. Place meat in baking dish, top with mashed potatoes and cheese if using.
  6. Bake in oven for 15 minutes or until top is golden.


No Pastry Quiche


1 ½ cups milk

3 eggs

60g melted butter

1 ½ cups SR Flour

3 rashers bacon or ham diced

(alternatively use 200g can of salmon or tuna)

1 diced onion

1 cup grated cheese

Salt and pepper to season



Pre heat oven to 200 degrees. Grease and flour a tin.

Beat eggs and milk together. Add onion, grated cheese and bacon. Stir in flour and then melted butter. Season with salt and pepper.

Pour ingredients into pan and bake for 30-45 minutes.


Fried Rice


1/4 cup un-cooked rice1 teaspoon of oil1 rasher of bacon¼ large onion


1 egg

½ chopped green capsicum

1 cob corn

Small chicken stock cube

soy sauce


  1. Cook rice in boiling water for 5-7 minutes.
  2. Drain and allow to cool.
  3. Heat oil in a deep pan or electric fry pan.
  4. Add beaten eggs and fry until set.
  5. Remove from pan and chop up.
  6. Fry diced bacon lightly in the pan with chopped onion, carrot, corn and capsicum until soft.
  7. Add rice. Stir through stock cube.
  8. Add eggs, and heat through for a few minutes.
  9. Season with soy sauce.


SLIDER –Beef and Feta Patties with salad

Serves 2


500g mince

1 grated carrot

¼ onion, diced

1 clove garlic, crushed

½ teaspoon dried chilli flakes

1 teaspoon finely grated lemon rind

¼ cup finely chopped flat-leaf parsley

¼ teaspoon oregano leaves

1 tablespoons finely chopped mint

100g feta, crumbled

1 egg

Sea salt and cracked pepper

1 spray olive oil


1 Combine all of the ingredients and shape into small patties to fit the rolls.

2 Cook in a non- stick pan with a spray of oil.

3 Cut roll on a diagonal and fill with burger, lettuce and tomato.

4 Drizzle with dressing.

Yummy Muffins

Ingredients                                                 Method

1 weetbix, crushed½ cup sultanas1/4cup caster sugar1 cup self-raising flour

1 teaspoon cinnamon

1 carrot, grated

½ apple, grated

1 ½ eggs

½ cup reduced fat vanilla yoghurt


1 Pre –heat oven to 180c.2 Lightly grease or line muffin pan with paper cases.3 In a bowl, combine crushed weetbix and sultanas with ¼ cup boiling water. Stir to absorb water.4 Sift in sugar, flour and cinnamon.

5 Add grated apple and carrot.

6 In a jug, combine the eggs and yoghurt. Pour into dry mixture, then stir until just combined. Spoon evenly into muffin pans.

7 Bake for 15 minutes or until golden brown.

8 Dust with icing sugar to serve.




CAKE:60g butter

1/3 cup caster sugar

1 large egg

1 cup Self Raising Flour


¼ cup milk


BUTTER ICING:1 cup icing sugar

1 tablespoon melted butter

½ tablespoons water or milk





Beat butter and sugar to a cream. Add the vanilla.

Add egg and beat well. Sift flour.

Add flour and milk alternatively and mix lightly into a soft dough.

Spoon into paper containers

Bake in a good moderate oven (190◦C) for 10-12 minutes .

Makes 12 cakes.


Sift icing sugar into a bowl.

Add butter and sufficient water/milk to make a smooth paste.


Chocolate: Sift 1-2 tablespoons cocoa with icing sugar.




1 cup Self Raising Flour2 tablespoons sugar1 tablespoon melted butter1 egg

¾ cup milk



  1. Add all ingredients to a bowl except milk
  2. Slowly add milk whisking into the ingredients
  3. Put one knob of butter into a heated pan and pour four small amounts into the pan. When start to bubble turn over and cook further 1 minute.


Butternut Squash and Sage Pesto Pizza


For the pesto:

2/3 cup fresh sage leaves, torn

A small handful of toasted walnuts

A small handful of finely grated parmesan cheese

2 cloves of garlic, mixed

¼ cup extra virgin olive oil

Salt and pepper to taste

For the pizza:

1 ball of basic pizza dough or store bought bases

1 tbs olive oil

½ of a red onion, finely chopped

1 medium sized butternut squash, peeled and cubed (about 1 inch sized cubes)

¼ cup of finely grated parmesan cheese

A healthy drizzle of balsamic glaze

Salt and pepper to taste



Preheat oven to 220◦C. Toss the butternut squash with a little olive oil and salt and pepper. Place on a greased baking sheet and roast for about 20-25 minutes. Remove from oven and set aside. Keep the oven temperature the same.

Roll out your pizza dough. Spread a healthy portion of pesto, followed by the butternut squash, followed by the red onions. Sprinkle everything with parmesan cheese. Bake in the oven for 10-12 minutes or until crust is golden brown. Remove from oven and drizzle the with balsamic glaze. Enjoy!


Carol Sloan’s Saucy Base


200g Beef mince

1 can crushed tomato

½ tsp Curry Powder

1 Brown onion

1 tsp Italian Herbs

Cooking spray

Pasta (spaghetti or penne)


  1. Spray a frying pan with cooking oil and place on medium heat.
  2. Dice half a brown onion and add to the pan.
  3. Place a medium pot of water on the stove with a lid, add a pinch of salt. Once boiling add a handful of pasta.
  4. Add mince and brown.
  5. Add curry powder and herbs.
  6. Stir in crushed tomato
  7. Simmer on low heat.
  8. Once pasta is ale dante, drain water from pasta and add pasta to mince. Heat for a further minute then serve.
  9. Complete spaghetti with a pinch of parmesan or cheese.


Savory Mince


1kg mince

2 onions diced

2 carrots diced

2 sticks of celery diced

500g frozen vegetables

1 tin tomatoes

Rolled oats for thickening

Salt and pepper to taste


Heat oil in a pan on medium and cook the onions, carrot and celery stirring regularly. Add the mince and cook until browned.   Add frozen vegetables and stir through. Add tin of tomatoes and rolled oats stirring through until well combined. Add Salt and pepper to taste.

Serve with rice that has been boiled in salted water.
